BROCOLLI FRY- WITH GOOD CARROT AND CABBAGE!!!


This is a Chinese recipe very quick can be made in a jiffy and nutritious.And the greeny crunchy brocolli tastes best.
Heres the recipe:


Cooking time:10mins
Preparation time:10mins
Serves- 2







Ingredients:
  • Brocolli florets-150gms
  • Carrot(juliennes)- 1no
  • Onions(slices)- 1no
  • Ginger(juliennes)-1tsp
  • Cabbage(chopped)- 100gms
  • Oyster sauce- 2tsp
  • Green chillies(chopped)- 2no
  • Black pepper powder-1/2tsp
  • Salt to taste
  • Cooking oil- 2tbsp
Cooking method:
  • Heat oil in a pan,add ginger and saute for a minute do not brown it.
  • Add onions and green chillies and cook till onions are transparent,add cabbage and carrot,and cook covered for 5 minutes.
  • Add brocolli and all the other ingredients and cook covered for another 5-6mins.
  • Serve with Naans or Rice.

CHICKEN BROCOLLI-WITH THE GOODNESS OF ROASTED SESAME OIL!!!


This is a chinese  recipe with the use of  roasted sesame oil,easy to prepare,light and most important good taste.
Brocolli adds to its taste and garlic always makes any dish healthy and flavourful.Heres the recipe:

Cooking time: 20mins
Preparation time: 10mins
Serves: 4

Ingredients:
  • Chicken pieces-500gms
  • Black pepper powder- 1tsp
  • Green chilli sauce- 1tsp
  • Garlic(chopped)- 2tsp
  • Soy sauce- 2tsp
  • Brocolli florets-150gms
  • Worcestershire sauce-1tsp
  • Salt to taste
  • Cooking oil-2tbsp (preferred roasted sesame oil)
Cooking method:
  • Clean the chicken trimming all the excess fat and wash.
  • In a deep pan put oil warm it,add garlic and saute it for a minute and now add the chicken pieces and cook for about 10mins stirring.
  • Add black pepper powder,green chilli sauce.Mix well.
  • Add the brocolli,soysauce,worcestershire sauce and salt to taste.
  • Cook covered for 5 min,dont overcook the brocolli and remember soysauce and worcestershire sauce have a good amount of salt so check before adding salt.
  • Serve hot with Naans or Fried rice.

MANUFACTURING OF FAKE EGGS!!!

In China there are  schools and classes that teach a variety of blatant technology, even eggs can be modulated by chemical materials, but also be able to fry cook, is currently the most popular False course.


Step 1 modulation of raw materials

Using 7 kinds of chemical materials, see pic below

Fake egg was made from calcium carbonate, starch, resin, gelatin, alum and other chemical products.


Step 2 egg production

Raw egg into the mold to 2 / 3 full, put calcium chloride, colouring die, the egg appears on the film been announced.

The 'yolk' is shaped in the round mould. 'Magic water' containing calcium chloride is used.


By adding a yellow pigment and become raw egg yolk.

Step 3 fake egg shape
In the mold into 1 / 3 raw egg white, like the first package, like dumplings into the egg yolk, egg white into another, into the magic water, a shell eggs will come slowly. Naked egg shape to 1 hour to dry after washing with water, at shells ready.



Step 4 Sewing lines through the use of eggs, immersed in paraffin wax, calcium carbonate, such as modulation of the eggshell into a solution, repeated several times until the shell a little dry, immersion in cold water pumping line shape, this point, the egg has been put on a false cloak , You're done.


Hard shells are formed by soaking in paraffin wax onto the egg, which are then left to dry.

Oh yeah The Egg is ready. The artificial egg shell is very fragile and break easily but who cares!!
Look so real
Many small bubbles is formed during frying the egg but not many people can tell the difference.
The egg look exactly the same, and the eggs taste better than real but you are adding to the
statistic of food poisoning person.

Why make fake eggs ?

Because of money.
The cost of fake egg is only 0.55 Yuan/kg, while the true eggs’ market price is 5.6 Yuan/kg.

CHICKEN IN CHILLI GARLIC SAUCE-YUMMYLICIOUS!!!

This is a chinese gravy served with rice or noodles,very easy to prepare and I have made it  with Zero-oil,super healthy,lots of garlic gives it  a very distinct taste.And the most important part is its my Hubby dear's favourite,give him anything in Chilli-garlic sauce and his day is made.
So this ones for you my "Dearest Hubby"
Here's the recipe:
Cooking time:20mins
Preparation time:10mins.
Serves-5

Ingredients:
  • Chicken boneless-500gms
  • Garlic(chopped)- 15cloves
  • Tomato ketchup -1cup
  • Red chilli powder- 2tsp
  • Black pepper powder- 1tsp
  • Soy sauce- 1tbsp
  • White vinegar- 3tsp
  • Cornflour- 2tbsp
  • Salt to taste
  • Corriander(chopped)- 1tbsp  (optional-this will make it Indo-chinese)
  • Onions(cut in squares)- 1no
Cooking method:
  • In a bowl mix all the ingredients with 2 cups of water except chicken,cornflour and onions.keep aside.
  • Cut the chicken pieces in juliennes or small pices,clean thoroughly.
  • In a pan put the prepared sauce and let it boil for 5mins.
  • Add chicken pieces and cook for another 10 mins strirring in between,Add water if needed.
  • When the chicken gets cooked dissolve cornflour in 1cup of water and add.
  • Add onions and corriander, keep stirring the mixture will start thickening,Add water to get your desired consistency.
  • Serve hot with Chinese fried rice or Noodles.

CHINESE FRIED RICE-WITH SUCCULENT CHICKEN IN FLAVOURFUL SOY SAUCE!!!

CHINESE CUISINE-characterised by the use of garlic,soy sauce,chinese 5-spice powder,sesame oil and monosodium glutamate(Ajinomoto) popularly known as the chinese salt,the recipes are often stir-fried in a wok on high flame.The vegetables or meat used like chicken,lamb,beef or any seafood are often par-boiled(boiling for a brief period till it is half cooked) or fried before,so the final cooking time is reduced and it gets ready quickly.Stir in the vegetables,meat,sauces and spices and the dish is ready.

In brief I will write about the most common ingredients of Chinese-cuisine:
  1. Chinese vegetables: Chinese brocolli,Chinese cabbage,Bok-choy,Yu-choy.
  2. Chinese dried ingredients: Dried Fungus,Dried chinese mushrooms.
  3. Chinese spices: Fennel seeds,8 star anise,Cinnamon,Szechuan peppercorns,garlic,ginger.
  4. Chinese cuisines: Shandong cuisine,Cantonese cuisine,Szechwan cuisine,Hunan cuisine,Fujian cuisine,Anhui cuisine,Zhejiang cuisine,Huaiyang cuisine.
Mild in flavours,commonly less spicy and aromatic and yet so amazingly tasty best describes this cuisine.Many parts of the World have adapted this cuisine in their own way to suit their local palates like Indo-Chinese,American-Chinese.Chinese cuisine has become one of the most popular cuisines in the world.
Heres my first step towards this culinary journey of Chinese cuisine.

Ingredients for Chinese 5-spice powder:
(Five-spice powder encompasses all five flavours - sweet, sour, bitter, pungent, and salty)
  • Peppercorns/kali mirch- 4tsp
  • Star anise/chakra phool- 8no
  • Cloves/laung- 1/2tsp
  • Cinnamon/dalchini- 1tbsp
  • Fennel seeds/saunf- 1tbsp. 
Cooking method:
  • Dry roast all the ingredients for about 3 mins on medium flame till you get a nice aroma.
  • Cool and grind to a fine powder.
  • Mix all the ingredients well and keep it in air-tight container and use sparingly.
Ingredients for fried rice:
  • Rice- 2cups
  • Chicken boneless-200gms
  • Carrot(chopped)-1/2cup
  • Eggs(beaten)-2no
  • Spring onions (green portion-chopped)- 1/2cup
  • Black pepper powder- 1/2tsp
  • Garlic(chopped)- 1tsp
  • Soy sauce-2tbsp
  • Salt to taste
  • Oil-3tbsp   (preferred-sesame oil) 
Cooking method:
  • Wash and boil the rice in 6 cups of water till cooked completely,drain the excess water in a sieve.Put cold water so that rice grains are not sticky and rice doesnt cook further.Keep aside
  • Cut the chicken piece in to thin long pieces like juliennes,removing all the excess fat and clean thoroughly.
  • In a pan heat oil add eggs,scramble them,add garlic and saute for another 1 min.
  • Add chicken juliennes and carrot and cook for another 5 mins on high flame stirring.Add 1/4cup water and cook covered for 2mins on a slow flame.
  • Add boiled rice and spring onions.
  • Add pepper powder,salt and soya sauce and stir fry for another 5 mins.
  • Serve hot with hot garlic sauce.

CHICKEN SHAHI KORMA-CHICKEN IN THICK YOGURT AND CREAMY GRAVY!!!

KORMA-This curry of mughlai origin, is made up of thick yogurt, nuts paste, spices and herbs.Its a very festive dish, served with Naans and rice.They are varieties of it like the 'Navratan korma', 'Shahi korma' ,
'Vegetable korma', etc and is a very favourite of Mughlai cuisine lovers.
Heres the recipe:

Cooking time :20-25mins
Preparation time: 15mins
Serves: 6

Ingredients:
  • Chicken with bones-500gms
  • Yogurt-200gms
  • Onions (sliced) - 1no (large-size)
  • Ginger and garlic paste-2tsp
  • Red chilli powder-2tsp
  • Green chilies-4-5
  • Garam masala powder-1tsp
  • Turmeric powder/haldi-1/4tsp
  • Corriander leaves (chopped) - 1/4cup
  • Mint leaves / Pudina (chopped) - 1/4cup
  • Almonds-10no
  • Cashewnuts-10no
  • Pistachios/Pista-10no
  • Salt to taste
  • Cooking oil-1/2cup (8tbsp)

Cooking Method:
  • Wash and clean the chicken pieces.
  • Grind Almonds, Cashewnuts and Pistachios in to very fine powder.
  • In a blender put Yogurt, Ginger and garlic paste, Red chilli powder, Garam masala powder and turmeric powder and blend well.
  • In a mixing bowl put the chicken pieces, put the blended yogurt mixture and the almonds, pistachios and cashewnuts powder and salt.Mix well.Keep it covered for atleast 1/2hr.
  • Meanwhile in a deep pan heat oil and add the sliced onions and fry till nice goden brown.Add the chicken marinade cook for 5-8 mins on medium heat stirring well.
  • Add 1 / 2 cup water along with the whole green chillies, corriander leaves, mint leaves.
  • Cover and cook for another 15mins on a slow flame,stirring in between to avoid burning and add about 1/4 cup of water if it starts sticking.Adjust the gravy if you want a thinner consistency add water accordingly.
  • Serve hot with Naan or Rice.

STEAMED FISH WITH MASHED POTATOES-SO HEALTHY AND FILLING!!!

ZERO-OIL cooking is cooking food without the usage of oil, the cooking method may be steaming, baking, etc.The whole idea behind ZERO-OIL is just to restrict the intake of Oil / Butter / Ghee to the prescribed limit per day and not to avoid it completely as minimum of 10% of calories should come from fats and oils.Fats / Oils are good source of energy, aid in the absorption of Fat soluble vitamins like A, D, E and K, help in digestion.
Zero-Oil food is good for weight-watchers, maintaining cholesterol, in certain sicknesses and for maintaining over-all health.The idea is to include regular dishes with ZERO_OIL dishes and creating a perfect balance of your meals to regulate your fat intake.
In this recipe I used the steaming method.Heres the recipe:

Cooking time: 15mins
Preparation time: 10mins
Serves: 2

Ingredients for fish:
  • Fish steaks / Boneless pieces-6
  • Black pepper powder-1tsp
  • Lemon juice-2tsp
  • Mustard paste-1tsp
  • Salt to taste
Ingredients foe mashed potatoes:

  • Potatoes (- 1no (large size)
  • Red chilli powder-1/2tsp
  • Corriander leaves (chopped) - 1/4cup
  • Chat masala powder-1tsp
  • Salt to taste
Ingredients for serving:

  • Lettuce leaves-5-6
  • Tomatoes (chopped) -1 no
Cooking method:
  • Clean the fish pieces.
  • Mix all the ingredients of fish and keep aside for 10-15mins
  • Arrange the fish pieces in a steamer and steam it for 10mins.
  • Meanwhile boil the potato.Cool and mash finely.
  • Mix all the ingredients of potato and keep aside.
  • For serving: Tear the lettuce leaves and mix with the tomato and arrange the steamed fish pieces on top and serve with mashed potatoes.

KHUBANI KA MEETHA-DELICIOUS APRICOTS DESSERT!!!

This very famously called the "KHUBANI KA MEETHA", A very famous sweet dish of the city of Hyderabad which every Hyderabadi would swear by, made up of dried Apricots, served with Ice cream, cream, fruits or plain custard.
Simple to prepare and yet so exquisite can sum up this rich dessert.
Heres the recipe:

Cooking time :15-20mins.
Preparation time :15-20mins
Serves-5-6


Ingredients:
  • Dried apricots-500gms








  • Sugar-1cup
  • Vanilla essence-few drops
  • Rose essence-few drops
Cooking method:
  • Wash and soak the apricots in enough water for about 7-8hrs.
  • After soaking in the water the apricots will nicely swell up.
  • Remove the seeds-These seeds yield small almonds, Soak the almonds in hot water for about 10-15mins, Cool and peel the skin.Keep aside.
  • In a deep pan put the soaked apricots along with the water used for soaking, the water should be just enough to cover the apricots, discard excess water.
  • Cook on medium heat stirring in between till apricots are soft and the mixture is thick gravy like consistency.
  • Add the essences.
  • At this point you can either blend this mixture after it cools down so that the apricots become mashy or you can keep the apricots whole, The way you like.
  • Cool the mixture.
  • Serve it topped with Cream or

  • Dry fruits.

SWEET VERMICELLI-CELEBRATE WITH THIS SPECIAL DESSERT!!!

SWEET SEVIYAAN-with out sweets any occasion or your meal is incomplete and this very easy,quick preparation is great for unexpected guests and a treat to your sweet tooth.
This dish is usually prepared by Muslims all over the World on Eid festivities apart from "SHEER_KORMA".
Heres the recipe for this simple delight.

Cooking Time:15mins
Preparation Time:10mins
Serves:7-8


Ingredients:
  • Fine Vermicelli(thin)-500gms
  • Ghee-6tbsp
  • Sugar-1cup
  • Mixed dry fruits(chopped)- 1/2cup(Cashewnuts,Almonds,Pistachios,Raisins,etc)
  • Milk-250ml
  • Cardamom powder-1/4tsp
Cooking method:
  • In a pan heat ghee and add vermicelli and fry till you get a nice golden-brown color.
Note:Theres roasted vermicelli available, using this reduces the time.
  • Simultaneously in a separate pan heat milk and add sugar and mix till all the sugar dssolves,add cardamom powder and half of the dry fruits.
  • Add this millk mixture to the vermicelli ,mix well,Cover and cook on a very slow flame,in about 5-8 mins the vermicelli will  become soft.In case the vermicelli is still not cooked just sprinkle some milk on top and cook for another 2mins
  • Serve garnished with dry fruits.

FISH FRY-FISH FRIED WITH AROMATIC CUMIN POWDER!!!

FISH-This amazing Seafood is an excellent protein food with fewer calories and higher levels of omega 3 fats,Fish can be fatty or lean, but it's still low in saturated fat,better than other meat sources.Eating at least two servings of fish each week  proves good for overall health.They are various Fishes for example trout,tuna, kahawai, trevally, kingfish, warehou, dory, salmon, sardines,pomfret,eel,,etc.
The best way to consume fish is to grill,steam or if frying then very less oil should be used to get the maximum benefits from its consumption.
This is a very simple recipe of Fish-fry using King-Fish in very little oil.You can use any fish steak you want.Heres the recipe:

Cooking time:10mins
Preparation time: 15mins
Serves: 1-2 persons

Ingredients:
  • King fish steaks/slices- 6
  • Red chilli powder-1/2tsp
  • Black pepper powder- 1/2tsp
  • Lemon juice-3tbsp
  • Garlic paste-1tsp
  • Turmeric powder/Haldi-1/4tsp
  • Cumin powder/Zeera- 1/4tsp
  • Corriander powder/Dhanya- 1/4tsp
  • Salt to taste
  • Oil-2tsp
Cooking method:
  • Clean the fish slices removing any fat attached to it.Drain all the excess water.
  • Take all the ingredients in a bowl except oil and mix well.
  • Now spread this mixture evenly on the fish slices.
  • Keep it aside for 10-5mins.
  • Heat the oil in a pan and put the fish slices,turn it after 5mins and cook till even brown on both sides.
  • Serve hot with rice or any bread of your choice.
  1. Note:It takes only about 10mins or the fish to get cooked,Never overcook the fish.
  2. And the test for a fresh fish is, it will never break when you are cooking,if it is stale it will beakwhile cooking.
  3. In the condition of the fish breaking apply 1-2ttbsp of plain flour or chick pea flour or fine semolina along with the ingredients and the fry.
